Ode to My Studded Snow Tires


Today I woke up ill,
and when I look through the window sill,
All I see is snow,
And I have places to go

After half the day of moping around,
I went to the post office, to see if my package is found,
I hop into the car,
Happy I don't have to drive far,

The mall is down the hill,
Sad that I didn't have Terry or Phil,
For, I will have to make the drive
And thanks to my tires, I know I will arrive alive

Popular Demand!


Last Friday, I was at the grocery store and you know how they have those impulse buy cooking magazines? Well, having this turkey dinner planned, I was on dessert duty (p.s. Loooooove baking) and I saw Betty Crocker's Cupcakes, Cakes and More. Sold.

This is how I came across Champagne Cupcakes.. perrrrrfect. Its so easy to make, love it.. and Becca had a bottle of Champagne from her wedding... perrrrrfect again!

Cupcake:

1box
Betty Crocker Super Moist Cake Mix
1 1/4 cup Champagne
1 1/3 cup Veggie Oil
3 Egg whites
4 or 5 Drops of red food colouring

Icing:

1/2 cup Softened Butter or Margarine
4 cups Icing Sugar
1/4 cup Champagne
1 tsp Vanilla
4 or 5 Drops of red food colouring

1) Heat oven to 350 (325 for dark non-stick pans). Place paper cups in each regular size muffin dish.

2) In large bowl, combine dry cake mix and Champagne. Add oil, eggs and food colouring. Beat with electric mixer (if you don't have one, sweet talk your partner into doing it) on medium speed for 2 minutes. Divide Batter into paper cups.

3) Bake 17-22 minutes or until tooth pick comes out clean. Cool 1o minutes; remove from pan and let cool completely for 30 minutes.

4) In medium bowl, beat frosting ingredients with electric mixer (or have Terry or Phil do it) on medium speed until smooth. Frost cupcakes, sprinkle with pink sugar... or don't sprinkle...whatevs

Donezo! Enjoy the yumminess in large quantities because apparently its only 230 Calories...if your counting

Our Little War Amp


Happy Easter to all, I must say it was a good one. Becca and I planned an Easter dinner, it was the first time she ever made a turkey.... well I guess you could say it was tag teamed with Phil, he was the life saver in this whole endeavor. Simply because he had cooked a turkey before... and I suppose his chef skills came in handy too.
I was on desert duty and I found this recipe for Champagne Cupcakes... yes Champagne in both the cake and the icing! I was told that I should sell my deserts at the bake sale they have at the mall. Imagine that, sellin' ma wears at a bake sale....I love how innocent this town can be lol!

The best part about this whole turkey was when Rebecca took it out of its wrapper and discovered that it only had one wing... our little war amp turkey. The poor turkey, on his tour of Nam, stepped on a land mine and blew his wing off. Poor sucker had to crawl its way into the freezer at the Extra Foods, limbless. The funny part was it wasn't sold as a Utility Turkey (which is fancy talk for damaged goods) it was sold as a whole turkey... Extra Foods just had to rub it in his face that he wasn't normal!. Never the less, it was pretty fuckin' good!.

In the middle of this turkey chaos, I received a phone call from my mother, she said there was someone there that wanted to say hello...so I told her to call me back on ichat. It was my cousin Leanne and her boyfriend Alex, they just got engaged!! and she's pregnant!! love it love it!.
Did I mention, she wants me in the wedding party?...they are planning on getting married in July... sooo I better start crash dieting! gotta get on my A-Game for the wedding photos!

And I guess with that being said, I'm going to be in Victoria a lot more this summer than I thought I was... its going to be tight with the Gallery Show and the multiple weddings I have to go to, better start saving my frequent flier miles :)
